Advances in ingredients to improve food and health. This project has enabled the successful generation of knowledge required to obtain new ingredients and food matrices that help to reduce food-related illnesses.

In this field, new products have been developed, which stand out because of their nutritional quality, and go even further by carrying out nutritional intervention studies in animal and human models. The protective effect against infections and prevention of obesity has been scientifically proven in some of the developed products.
